Native Foodies - Potato Candy

Food tells the story of whoever cooks it.  Like the different chapters of a book our stories change depending on the environment, people, and place we are surrounded by.  Food is how many people including me show their love. I am still writing my food story, will you join me?

This blog will be about my food story and how I want to share the love of cooking with my family, friends, and all of you.  I will be showing you some of my family's favorite recipes, and hopefully some of yours too. Ready, Set, Let's Cook!

Have you ever tried Potato Candy?  I know it sounds weird and as a child, I really didn't like it.  My dad, on the other hand, loves it.  Every year, my grandmother Estella would make it for my dad, either on his birthday or during the holidays.  I don't really remember her exact recipe, but I do remember the fun words that would come out of the kitchen those years that the electric mixer broke.  If I recall correctly there were a total of three hand mixers breaking while making potato candy for my dad. All the time and effort was worth it and he savored every bit of it.

Potato candy is very simple to make it just takes a little time and patience. 

The recipe begins with three simple ingredients:

  • 1 medium russet potato - Enough for 1 cup of potato
  • 4-6 cups of powdered sugar
  • peanut butter (I like to use Jif but it is your kitchen, your rules)

Now it is time to roll your sleeves up and have a little fun!  

  • Peel then chop the potato into small pieces (The smaller the pieces the quicker they cook)
  • Place the potatoes into a small saucepan and cover with water
  • Boil until potatoes are fork tender
  • Drain the potatoes and place them into a bowl
  • Mash the potatoes with a spoon until they form a paste
  • Add the powdered sugar a little at a time and mix well after each addition

It will look a little like a weird soup, but just keep going you will be amazed by the end.

  • Continue adding powdered sugar and stirring until it starts to form a ball of dough

  • Sprinkle the counter with powdered sugar and place the dough on the sugar
  • Knead the dough until it is smooth and not sticky anymore (It will resemble pie dough)

  • Now time to get rolling - roll your dough out into a rough rectangle shape about 1/4 of an inch in thickness

Don't worry if it isn't a perfect shape, at my house, we call it rustic

  • Peanut Butter time - Spread a thin layer of peanut butter all over the dough

  • Roll it up like you would cinnamon rolls

  • Cut into thin slices - Plate Them - Eat Them

 

I wanted to explain a little about why I chose this particular recipe.  You see after my grandmother died we just didn't keep up the tradition. So now that I am older and have a family and grandchildren of my own, I want to teach them that traditions can be restored as long as there are people to keep them.

So this very special treat I made for my dad for Fathers Day!
